(The classic Aku Aku cocktail revisited)
Glassware: coupe glass
Garnish: mint sprig
Combine fresh pineapple chunks and mint leaves in a tin and muddle them together. Add remaining ingredients to the tin with about two and a half scoops of pellet ice. Flash blend for 8-12 seconds and double strain into a coupe glass using a funnel. Add mint to garnish.
This cocktail is a modified version of the Aku Aku cocktail found in the Smuggler’s Cove recipe book.
